; The first of the villages of the Priorat to get formal recognition as an appellation was Gratallops. This movement of growers, in part led by Alvaro Palacios, was to create an appellation system for the Priorat more like that

"(50% Xarello/30% Macabeu/20% Parellada). The grapes are harvested, pressed, and fermented separately in stainless steel. After fermentation, the final blend is assembled and ages for 18 months on its lees in the bottle.
