“80% Sangiovese with the balance in Merlot, Syrah and other local grape varietals. Each vineyard plot is picked and fermented separately, as they believe in making site-specific wines. All grapes were handpicked and foot-trodden in open top vessels in a covered area outdoors for about three weeks. The outside warming and cooling each day helps the fermentation to begin naturally. Even in rainy vintages, the strong yeast population enhanced by Biodynamic farming means the grapes turn to wine without any need for intervention. Aging takes place in concrete and neutral barrique. Every bottle is rinsed with the property's spring water before being filled.”
